When we think about hand-made pasta and dumplings, most often we think “gnocchi”. But in Italian cuisine, the potato gnocchi we often think of are only one in a larger category of dumplings. In this spin-off of our pasta class, we’ll explore different kinds of hand-made pastas, the regions they come from, and the variety and simplicity that goes along with them.
