Summer is the time for an abundance of fresh foods. But, traditionally, it's also the time when we have searched for ways to preserve some of those foods to last beyond what we can consume at once. In this class, we'll look to some little friends (microbes!) and learn a few ways that we can keep the peak of freshness in our kitchens a while longer through pickling, fermenting, blanching, and canning.
